Dum Aloo

Here is a recipe for Dum Aloo from a proper Kashmiri friend of mine.

For all those guys and gals who will be cooking their own meal tonight!


  1. Boil medium sized aalu,
  2. pierce them and deep fry
  3. so that Oil get in pores...and it becomes crispy
  4. fry till outer cover becomes dark brown,,(Black nahi bilkul redish brown)
  5. in a vessel add some oil..
  6. add cumin seeds...1 spoon(tea spoon leveled...not heap ful)
  7. garlic ginger paste..2 spoons
  8. brown cardmom...moti elaichi ..1
  9. cloves....3
  10. add red chilli powder 2 spoons...tea spoons
  11. add saunf powder...3 spoons
  12. fry thoda saa
  13. add beated curd...1 cup ...stirr continiously...till it boil
  14. add fried potatoes...dip in the paste/gravy ache sei mix it..
  15. then add water ...just to dip all potatoes....put a lid and cook on sim for 15-20 mins...
  16. dekhna kahi jala na do....

This is what it should look like in the end (theoretically speaking).
