Here is a recipe for Dum Aloo from a proper Kashmiri friend of mine.
For all those guys and gals who will be cooking their own meal tonight!
- Boil medium sized aalu,
- pierce them and deep fry
- so that Oil get in pores...and it becomes crispy
- fry till outer cover becomes dark brown,,(Black nahi bilkul redish brown)
- in a vessel add some oil..
- add cumin seeds...1 spoon(tea spoon leveled...not heap ful)
- garlic ginger paste..2 spoons
- brown cardmom...moti elaichi ..1
- cloves....3
- add red chilli powder 2 spoons...tea spoons
- add saunf powder...3 spoons
- fry thoda saa
- add beated curd...1 cup ...stirr continiously...till it boil
- add fried potatoes...dip in the paste/gravy ache sei mix it..
- then add water ...just to dip all potatoes....put a lid and cook on sim for 15-20 mins...
- dekhna kahi jala na do....
